I cut up the zucchini and fried it in a pan with a little butter, and then I threw some carrots in some water and microwaved them for about 3 minutes. When the zucchini was finished I just heated up the tortillas and put a little cheese on them till it melted. I warmed up my beans in the microwave after the carrots cooked. Then loaded up my tortillas and then put some fresh tomato on top. AND .....Fabulous!! They were absolutely Delicious and So healthy and So Frugal! I was thinking you could really add whatever you have in your Veggie Drawer... Grilled Chicken would also go really well with this too.
